CRANBURY, N.J. — Chefs for Archer Daniels Midland Co. featured the flavors of Asia, India, Latin America and Italy in sampling dishes May 8 in Cranbury. All the items were either vegetarian or vegan thanks to plant protein sourced from soy, beans and ancient grains.

On the menu at the new culinary center in ADM’s facility in Cranbury were cheese tea, Philly cheese steak samosa, a cauliflower shawarma slider, an ancho chili bowl, a General Tso’s dish and coconut affogato.

Bill Cawley, left, a chef for ADM, explains how flavors may benefit dishes plant-based protein. Phil Stepler, another ADM chef, looks on.
