WILMINGTON, DEL. — DuPont Nutrition & Biosciences launched a new culture series for yogurt manufacturers.

Yo-Mix Prime cultures were designed to increase process flexibility by providing full pH control before cooling and processing, DuPont said. They allow manufacturers to reduce the amount of skimmed-milk powder added to boost texture and enable sugar reduction without sacrificing sweetness.

They also maintain product quality throughout challenging distribution channels with variations in storage temperatures.

The Yo-Mix Prime series includes Prime 800 and Prime 900 cultures. Both are suitable for a variety of applications ranging from drinkable yogurt to Greek yogurt, the company said.

“We understand that yogurt manufacturers have a vision of how their ideal fermented dairy products will turn out, and sometimes the ingredients may hold them back,” said Morten Boesen, global product line manager for dairy cultures at DuPont Nutrition & Biosciences. “Our versatile Yo-Mix Prime cultures can help our customers create a yogurt that is mild in taste while providing a great texture and mouth feel.”
