KANSAS CITY — From truffle-flavored sauces and oils to truffle-flavored spreads and truffle-flavored pastas, the flavorful fungi has been having a moment during the past few months.

Truff has expanded its uses of truffle flavors over the past few years beyond sauces. Recent introductions include a seasoning salt, which features flecks of black truffle, and a white truffle oil, which is formulated as a finishing oil with olive oil-infused white winter truffles. The company also partnered with Hidden Valley Ranch in August 2022 to release a limited-edition spicy truffle ranch.

“Truff is all about flavor exploration and reimagination,” said Nick Ajluni, co-founder and co-chief executive officer at Truff in August 2022. “Partnering with Hidden Valley Ranch was the obvious choice. Not only are they the original ranch, but they’re a truly iconic brand with a passionate community that’s helped make ranch a cultural phenomenon.”

Companies like Goodles and GrownAs* Foods also have tapped into the truffle flavor with their boxed macaroni options.

Goodles recently added “Here comes truffle,” which joined the company’s line of better-for-you boxed pasta. The flavor features a blend of white cheddar, Parmesan and black truffles. It contains 15 grams of protein per serving, 8 grams of fiber, and has prebiotics, according to the company.

GrownAs* Foods launched a vegan take on classic boxed mac and cheese. The plant-based pasta is available in a truffle flavor and is formulated with ingredients like nutritional yeast and smoked paprika.
