NEW YORK — Biotechnology company Pureture has formulated a plant-based casein. The company aims to formulate alternative dairy products using plant-based ingredients. 

Casein is a key component in animal-based dairy products and is a milk protein that creates a stable emulsion, preventing fat and water from separating, which gives milk its smooth texture, according to the company. The company has formulated the plant-based casein using yeast-based and plant-based materials, which will mimic milks normal taste, texture and functionality, the company said. 

 The plant-based casein may be used as a protein to cheeses and other alternative dairy products like milk and yogurt, according to the company.
