ATLIT, ISRAEL — Salt of the Earth, Ltd. developed Mediterranean Umami Powder, a clean label sodium-reduction ingredient for snacks applications.
The ingredient is based on the company’s Mediterranean Umami, which is microencapsulated onto a carrier of sea salt and native starch. It is designed as a 1:1 drop-in replacement for salty snack applications and may reduce sodium by up to 40%.
It also may be used by spice blenders and flavor houses as a tool to provide flavor and reduced sodium in seasoning blends.
