Instead of using a water-based broth, formulators may soak vegetables or bones in coconut water to create a unique and unexpected broth. Since coconut water is high in electrolytes, it provides salty characteristics. Coconut water, with its tropical fruit sweetness, also may bring a subtle sweetness to soup. iTi Tropicals created its own vegetable stock using coconut water that then was used as an ingredient in a sweet potato bisque.
